WHY IS IT HEALTHY?

* Carrots are very rich in carotenes, which are considered to be effective antioxidants, active protectors of our health. It is also due to carotenes that it is considered by popular wisdom to be very good for our eyesight: carotenes are converted into vitamin A inside our body.

* It is one of the few vegetables that loses very little nutritional value when cooked... Even some of its components become more available to our body than when eaten raw!

TIP:

If you are going to have it for breakfast, lunch or snack, avoid adding decorations that increase the sugar and/or fat content.

PREPARATION

1. Wash the carrots, peel and grate them. Place them in the blender, add the sunflower oil and blend. The carrots can be cooked a little to soften them and make them easier to mash; the result is just as tasty. Meanwhile, preheat the oven to 180º.

2. In a bowl, beat the eggs and sugar until fluffy and smooth.

3. Add the smashed carrots to the bowl and add the flour mixed with the baking powder, the brown sugar mixed with the cinnamon and the previously smashed walnuts. Mix well.

4. Cover a round cake tin of about 24 cm in diameter with baking paper (this will allow you to unmould the cake more easily once it is baked) and grease it with a little butter.

5. Bake for about 25 minutes or until the tip comes out clean when pierced with a knife.
