WHY IS IT HEALTHY?

* The vegetables in this recipe are very low in calories, making it a lighter rice dish than other ingredients. However, you'll be adding a great amount of fibre to your diet today.

Want an "express" version? Take a container of pre-cooked rice, heat it up in the microwave and add the vegetable ingredients you like best.

It's very easy to change the ingredients to adapt them to what you fancy or have in the fridge ... why not use some of the ingredients left over from another meal?

While the rice and vegetables are still warm, add the gratin cheese and mix well until the cheese melts.

PREPARATION

1. Put plenty of water to boil in a pan with a little salt. When it comes to the boil, add the rice and cook for the time indicated on the packet or until tender. Drain and rinse with cold water to stop the cooking.

2. Wash the courgette, remove the ends and cut into squares. No need to peel. 

Wash the asparagus and garlic under running water. Remove the hard part of the asparagus and the outer leaves of the garlic. Cut the asparagus into 2-3 cm pieces.

3. Put a drizzle of the oil in a deep-frying pan and, when it starts to heat up, add the courgette and the chopped asparagus. Lower the heat a little and cook, stirring with a spoon from time to time.

When you see that the vegetables are starting to soften, add the garlic and let them finish cooking, stirring constantly to prevent them from sticking together.

4. Add the drained rice to the pan. Mix all the ingredients well and keep on the heat until the rice has come up to temperature again.
